    The acidity affect enzyme reactions in that; The enzymes have an optimal pH, at which their reaction rate is maximized.

    Enzymes speed up the reactions between molecules in cells, and reduce the energy needed to enact the reaction. Very high pH would denature the enzymes as the enzymes work best at an optimum pH and temperature.
