T has been found that the tenderness of beef can be predicted by analyzing a cow's genes. So, commercial tests are now available for farmers to be able to determine which of their cows possess the "tough" gene and which possess the "tender" gene. If a farmer routinely tests his cattle and only allows cows with the "tender" gene to mate, what is he doing?
