    Some micronutrients, such as vitamins e and c, can function as antioxidants in that they are able to neutralize free radicals. Radical are highly unstable molecules produced in our body when we are exposed to toxins. Vitamins C and E, carotenoids (including beta-carotene), and the mineral selenium are all powerful antioxidants found in food.
