When this bacteria grows in food it produces different enterotoxins, which are stable at high temperatures. That is why if a food is contaminated with this bacterium, it is possible that it already contains enterotoxin and when it is reheated or cooked, even though the bacteria is killed, the toxin will remain active and will generate the disease.
