Simple columnar epithelium has just a layer which lines the digestive parts such as the stomach, small intestine and large intestine.

The stratified squamous epithelium also has a single layer but with a flat surface. It lines the oral cavity. This structure is most suitable for movement of particles through the surface which could be through diffusion or filtration.
