Why can the amylase enzyme only break down starch and not proteins?

Amylase has a complementary active site to break down the bonds between the straight, uniform glucose chains in starch. These glucose-glucose bonds exists in a completely different shape in cellulose and therefore require a completely differently-shaped active site to break them down.
