This is because of the very arid and boiling temp. conditions of the desert and the features of the plants known as stomata, basically pores on the undersides of leaves that allow the exchange of gases (oxygen and carbon dioxide) between plants and their environments, allowing with water. You see, if plants were to open their stomata during the day, when the sun's out and shining, they'd lose a heck lot of water, although they do get CO2. However, this is not in any way ideal for plants.

Therefore, plants have developed a means of storing CO2 during the night, when they lose less water and performing the Krebs cycle during the day. This system has led to a classification of plants under the title CAM (crassalucean acid metabolism). Overall, most of plant activity in the desert occurs during night, and this includes blooming.
