    Potassium sorbate is the potassium salt of sorbic acid. It is comprised of carbon, hydrogen, oxygen and potassium. Put differently, its chemical formula is: CH3CH=CH-CH=CH-CO2K. Potassium sorbate is significantly more stable than plain potassium, and it is often used to preserve food.
