    Tristearin is the beef’s primary fat. It is known as a triglyceride which is a molecule of glycerine that has reacted with three (3) molecules of fatty acid stearic acid. The chemical equation of the action of pancreatin on tristearin is triglyceride + 2H2O - - > 2HO (O=C) C17H35 + monoglyceride.
