    The gas inside a soda can is carbon dioxide which does not change. Now, the pressure inside the can is greater than the pressure outside. As the can is open, the gas escapes from the high region to the low pressure (atmosphere) outside. The hissing is essentially due to the equalization of the pressure differential.

    Thus as the gas escapes (expands) there will be a drop in temperature and the amount of gas.
