Biochemically speaking, acetylation of targets (majorly proteins and peptides) is believed to be mediated by an acetyl transferase, which catalyzes the transfer of an acetyl group from a donor molecule, acetyl-CoA, to the target protein or peptide. Bringing this into bear, such acetylation falls into the biochemical reactions class of reactions, more specifically into the anabolic reactions, since an acetyl group is being transferred.
