Water can absorb high amounts of heat before there is an observed rise in temperature. It has the highest heat capacity among all liquids. This is caused by the presence of hydrogen bonding in water molecules. Specific heat is the amount of heat absorb or released by a substance to change the temperature to one degree Celsius. The high value of this measurement is the cause why it takes a long time to or cool water.
