Should I be worried if I sent my teacher an email 2 weeks ago apologizing for not attending zoom calls and he writes back today saying "you got number 3 wrong on your science quiz" completely ignoring the super long email that I wrote?

Answer: honestly two things could have happened 1) he didn't get the email. or 2) he DID get the email but he doesn't really care. I don't know if your zoom calls are mandatory or not but mines aren't so, maybe he just doesn't mind. but if you're really concerned I would recommend shooting him another email. (maybe not as long) or if you have your teacher's number give him a call or text in regards to the situation.
