Noses are constantly brought up in The Great Gatsby. Why? It's obvious that the noses are symbols, right? They are mentioned over and over again. The butler's nose, myrtle's nose broken, dr eckleburg's nose, wolfsheim's nose, celebrity with blue nose, etc. What could they mean?
