There is a yellow and greasy substance that clumps under the skin of a chicken wing. Is this fat tissue? What are the two functions of fat in a chicken?

    The yellow packets of tissue under the skin of a chicken allow the chicken to insulate from temperatures when the chicken is alive. It acts as a barrier against the weather. When the chicken is prepared to be cooked these pockets of fat are often left to keep the meat from drying out while the chicken is being cooked.
