I will list several ways of how southern and northern societies differed in the 1800s.

During the 1800s, the southern societies are still largely based on agriculture. This means that they have a high demand for slavery. On the other hand, the northern societies almost entirely banned slavery during the 1800s. This actually contributed to the Civil War in the 1860s. Like I mentioned, southern states are largely relied on agriculture, while northern states are became much more industrialized in the 1800s. People generally live in a wealthier and busier lives in the northern societies, and the southern societies are like the opposite. Also, the southern societies mainly supported the democratic party, while the northern societies mainly supported the republican party.
