Gelatin recipes that include frozen fruit often say to not use pineapple. Gelatin is mostly a protein. Pineapple contains an enzyme that is often used in meat tenderizers. What effects might pineapple have on gelatin?

    The gelatin wouldn't set, so it wouldn't actually turn into gelatin.
