    Hydrolysis reaction of fats or troglcerides, is the reaction of fats with water to form triglycerols and 3 fatty acids

    It is the hydrolysis also reverse of condensation reaction. Most fats are glycerides - (triesters of glycerol). One chain of fatty acid (-COOH) is released and a molecule of three - OH groups (glycerol).
