To prevent re-contaminating dishware that has just gone through the dishwashing process:

Do not touch areas of the dish that a customer's mouth might touch.

Saliva usually provides a perfect medium for bacteria/virus to move from one host to another.

There is an exception to this situation. The only way you could touch the areas is if you're using protective object in your hands, such as latex gloves
