    Both. In order to make ice cream you need both types of reactions.

    Explanation:

    Given that liquids have more energy than solids, milk needs to release energy to become solid, here an exothermic reaction occurs.

    To freeze the milk we use salt and ice, and because solids have lees energy than liquids, the salt and the ice need to absorb energy. This is an endothermic process.
