It is true that many chefs today are taught using a culinary arts book written in 1903. It is still an amazing source of knowledge for anyone who would either like to become a chef, or just learn how to cook or improve their cooking skills. Although there are other, more modern resources today, culinary teachers still like to come back to this 'oldie' because it contains everything that any chef should know.
